Ingredients

  • 2 oz 60ml fresh grapefruit juice
  • 1 oz 30ml fresh lime juice
  • ¾ oz 22ml simple syrup
  • 3-4 fresh mint leaves
  • 3 cucumber slices
  • 4 oz 120ml soda water or sparkling water
  • Ice cubes

Garnish options:

  • Grapefruit slice
  • Lime wheel
  • Fresh mint sprig
  • Cucumber ribbon

Instructions

  • Prepare the glass: Fill a tall glass with ice cubes.
  • Muddle the aromatics: Gently muddle the mint leaves and cucumber slices in a cocktail shaker or mixing glass to release their flavors.
  • Add the citrus: Pour in the grapefruit juice, lime juice, and simple syrup.
  • Shake or stir: Add ice and shake vigorously for 10-15 seconds if using a shaker. If using a glass, stir well with a bar spoon for 20-30 seconds.
  • Strain: Pour the mixture through a strainer into the prepared glass.
  • Add bubbles: Top with soda water and stir gently.
  • Garnish: Add your choice of garnishes. A grapefruit slice and mint sprig work particularly well.
  • Serve immediately while the drink is cold and bubbly.

Notes

This mocktail can be adapted based on personal preferences. Those who enjoy sweeter drinks may add more simple syrup, while those who prefer tart flavors might increase the lime juice.
For a crowd, prepare a batch by multiplying the ingredients (except soda water) and store in a pitcher. Add ice and soda water to individual glasses when serving.
Experiment with other citrus fruits like blood orange or tangerine for different flavor profiles. Adding a dash of bitters (most are very low in alcohol) can provide complexity.
To make ahead, prepare the citrus juice mixture up to 24 hours in advance and refrigerate. The mocktail is best consumed immediately after adding the soda water.
