In a large pitcher, combine pear juice, apple juice, lemon juice, and honey. Stir until honey is dissolved.
Add ground cinnamon, nutmeg, ginger (fresh or ground), and vanilla extract. Stir well.
Add the cinnamon stick and a few pear slices.
(Optional) Mash fresh pear slices with a muddler or fork if using fresh pears instead of juice.
Fill the pitcher with ice to chill the mixture.
Pour in sparkling water or ginger ale slowly and stir gently to preserve bubbles.
Taste and adjust sweetness or spice as desired.
Pour into glasses filled with ice.
Garnish with extra pear slices, cinnamon sticks, rosemary, mint, or lemon wheels. Serve chilled.
