Bring water to a gentle boil, then remove from heat. Add green tea bags and cinnamon stick; steep for 5–7 minutes.
Remove tea bags and cinnamon stick. Stir in maple syrup, honey, lemon juice, and vanilla extract until mixed.
Let cool to room temperature, then refrigerate until chilled.
Fill tall glasses with ice and pour chilled tea over ice.
Top with mint leaves and lemon slices if desired. Stir and serve.
