Ingredients

For the base:

  • 4 ripe kiwis peeled and chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey or simple syrup
  • 8-10 fresh mint leaves
  • 1 cup cold water
  • 2 cups club soda or sparkling water
  • Ice cubes

For garnish:

  • Kiwi slices
  • Mint sprigs
  • Lime wheels

The key to this mocktail is using perfectly ripe kiwis.

Instructions

  • Prepare the kiwi puree: Add peeled and chopped kiwis to a blender with lime juice and honey. Blend until smooth, about 30 seconds.
  • Strain the mixture through a fine mesh strainer into a bowl, pressing with a spoon to extract all the liquid. This removes seeds and creates a smoother texture.
  • Muddle the mint leaves in the bottom of a cocktail shaker or jar to release their oils and aroma.
  • Combine ingredients: Add the kiwi puree, cold water, and ice to the shaker with the muddled mint. Shake vigorously for 15-20 seconds.
  • Serve the mocktail by straining into ice-filled glasses, filling about halfway. Top with club soda and stir gently.
  • Garnish with fresh kiwi slices, mint sprigs, and lime wheels before serving immediately.

Notes

This recipe makes about 4 servings and can be prepared in advance. The kiwi puree keeps well in the refrigerator for up to 24 hours in an airtight container.
For a frozen version, blend the strained kiwi mixture with ice instead of shaking. This creates a slushy texture perfect for hot days.
Try adding a splash of coconut water for a tropical twist. For special occasions, freeze kiwi pieces in ice cubes to add a decorative element to your drinks.
