Equipment

  • Large pitcher (64 oz)
  • Tea infuser or strainer
  • Measuring cups and spoons
  • Wooden spoon or long-handled spoon
  • Ice cube trays
  • Serving glasses

Ingredients

  • 8 cups water divided
  • 4 hibiscus tea bags
  • 2 cups fresh or frozen cherries pitted
  • 1/2 cup honey or agave nectar
  • 1/4 cup fresh lemon juice
  • Fresh mint leaves for garnish
  • Ice cubes
  • Optional: 1-2 cups sparkling water

Instructions

  • Bring 4 cups of water to a boil in a pot.
  • Add hibiscus tea bags and steep for 5 minutes. Then, remove tea bags and let the tea cool.
  • Place cherries in a blender with 1 cup water. Blend until smooth.
  • Strain the cherry mixture through a fine-mesh strainer into the pitcher.
  • Add the cooled hibiscus tea, remaining water, honey, and lemon juice to the pitcher.
  • Stir the mixture well until the honey dissolves completely.
  • Refrigerate for at least 2 hours until cold.
  • Fill glasses with ice and pour the tea mixture.
  • Top each glass with optional sparkling water and garnish with mint leaves.

Notes

The tea keeps fresh in the refrigerator for up to 3 days.
For a sweeter drink, add more honey to taste.
Replace fresh cherries with frozen ones when cherries aren't in season.
Make ice cubes from hibiscus tea to prevent dilution while drinking.
The recipe makes about 8 servings of 8 ounces each.
