  • 2 tablespoons grated fresh ginger
  • 4 cups sparkling water chilled
  • Ice cubes
  • Fresh mint leaves for garnish

Instructions

  • Prepare the cherry base: In a large pitcher, combine the pitted cherries, grated ginger, and honey. Muddle them together until the cherries release their juice.
  • Add lime juice: Squeeze the fresh lime juice and add it to the pitcher. Stir to combine all ingredients thoroughly.
  • Strain the mixture: Pour the mixture through a fine mesh strainer into another container, pressing to extract all the juice. Discard the solids.
  • Add sparkling water: Return the strained juice to the pitcher and add the chilled sparkling water. Stir gently to avoid losing carbonation.
  • Serve: Fill glasses with ice, pour in the cherry ginger sparkler, and garnish with mint leaves and lime slices.

The mocktail can be prepared up to a day ahead (without the sparkling water). Add the sparkling water just before serving to maintain the fizz.

    Notes

    This recipe serves about 4-6 people depending on glass size. For a stronger ginger flavor, let the ginger steep in the cherry mixture for 30 minutes before straining.
    To make ice cubes that won't dilute the drink, freeze some of the cherry juice in an ice cube tray. These colored cubes will maintain the flavor as they melt.
    For a kid-friendly version, reduce the ginger by half. Adults might enjoy adding a splash of vodka or white rum to create an alcoholic version.
    The leftover cherry pulp can be saved and added to smoothies or yogurt for a tasty treat with no waste.
