Drop the cherries, mint leaves, and simple syrup into your cocktail shaker.
Muddle gently—enough to get the juice and mint oils out, but don’t pulverize everything into mush.
Add bourbon, lemon juice, and a scoop of ice.
Shake it up hard for about 15 seconds, until the whole thing is frosty.
Strain into a rocks glass with fresh ice.
If you want a little fizz, top with club soda.
Garnish with a cherry and a sprig of mint.
