Ingredients

  • 1 cup fresh or frozen pitted cherries
  • 1/2 cup almond milk
  • 1/4 cup cherry juice
  • 2 tablespoons almond syrup
  • 1 tablespoon fresh lemon juice
  • 1/2 cup club soda
  • Ice cubes
  • Fresh cherries for garnish
  • Sliced almonds for garnish

Instructions

  • Add cherries, almond milk, cherry juice, almond syrup, and lemon juice to a blender.
  • Blend the mixture until smooth, about 30-45 seconds.
  • Strain the mixture through a fine-mesh strainer into a cocktail shaker.
  • Fill two tall glasses with ice cubes.
  • Pour half of the cherry-almond mixture into each glass.
  • Top each glass with 1/4 cup club soda and stir gently.
  • Garnish with fresh cherries and sliced almonds.

Notes

Store any leftover cherry-almond mixture in an airtight container in the fridge for up to 2 days.
For a sweeter drink, add 1-2 teaspoons of honey or maple syrup.
Replace almond milk with coconut milk for a different flavor profile.
Use sugar-free almond syrup to reduce calories.
Fresh cherries work best, but frozen cherries are a good substitute when cherries aren't in season.
