Ingredients

  • 1 oz London dry gin cognac can be substituted for a warmer twist
  • 0.5 oz lemon juice fresh
  • 0.5 oz simple syrup equal parts sugar and water
  • 3 oz champagne chilled; preferably dry
  • ice cubes for shaking
  • lemon twist for garnish

Instructions

  • Chill a champagne flute.
  • Add gin, lemon juice, and simple syrup to a cocktail shaker.
  • Fill the shaker with ice and shake for about 10 seconds.
  • Fine-strain into the chilled flute.
  • Top slowly with chilled champagne.
  • Express and add a thin lemon twist over the top.

Notes

Use a dry champagne to balance the simple syrup. Fresh lemon juice makes the brightest cocktail. For a softer, rounder profile, substitute cognac for the gin and slightly reduce the lemon juice to taste. Serve immediately while ice-cold and effervescent.
