  • Citrus juicer
  • Cutting board and knife
  • Vegetable peeler
  • Tall glasses
  • Stirring spoon
  • Ice cube tray
  • Small grater or zester

Ingredients

  • 1 cup fresh carrot juice about 3–4 carrots
  • 1 cup pineapple juice fresh or canned
  • 1/2 cup orange juice fresh is best
  • 2 tablespoons lime juice
  • 1-2 teaspoons honey or agave syrup to taste
  • 1/2 teaspoon fresh ginger grated
  • pinch ground cinnamon or allspice optional
  • 1 sprig fresh thyme plus more for garnish
  • 1 cup ginger ale or lemon-lime soda for fizz
  • ice cubes for serving
  • lemon or orange slices for garnish, optional

Instructions

  • Wash, peel, and chop carrots and ginger.
  • Juice or blend carrots until smooth; strain if a smoother texture is desired.
  • In a pitcher, combine carrot juice, pineapple juice, orange juice, and lime juice.
  • Add grated ginger, honey or agave, and optional spices. Stir well.
  • Add a sprig of thyme. Pour juice mixture over ice in glasses, filling two-thirds of the way.
  • Top with ginger ale or lemon-lime soda for fizz, stir gently, and garnish with thyme or citrus slices. Serve cold.

Notes

Fresh juice gives best flavor. Add more honey if carrots or pineapple are tart. Thyme, mint, or basil can be swapped. Extra ginger or a pinch of cayenne gives a spicy kick. Always serve over plenty of ice.
