Ingredients

  • 2 oz Caribbean rum spiced rum for extra warmth, optional
  • 0.5 oz fresh lime juice
  • 4-6 oz ginger beer Bundaberg or preferred brand
  • 0.25 oz simple syrup or ginger syrup, optional for sweetness
  • crushed ice to fill mug
  • lime wedge or lime wheel, for garnish
  • mint sprig for garnish, optional

Instructions

  • Chill your copper mug. Fill halfway with crushed ice.
  • Pour in Caribbean rum using a jigger.
  • Add fresh lime juice and simple syrup, if using.
  • Top with ginger beer, pouring slowly to keep bubbles.
  • Stir gently with a bar spoon to blend.
  • Add more ice as needed and garnish with a lime wedge or wheel and mint sprig.

Notes

Use spiced rum for a warmer flavor. Choose your ginger beer for more spice or sweetness. Stir gently to keep the fizz lively. Too strong? Add more ginger beer. Too tart? A little extra simple syrup helps. Enjoy immediately for best refreshment.
