  • Wooden spoon or silicone spatula
  • Cocktail shaker or large jar with lid
  • Small knife
  • Measuring spoons and cups
  • Fine-mesh strainer

  • Ice cube tray

Ingredients

  • 1 large ripe banana
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla extract
  • 0.5 cup pineapple juice
  • 0.75 cup cold sparkling water or club soda
  • 1 tablespoon fresh lemon juice
  • 3 ice cubes plus more for serving
  • 1 teaspoon butter or margarine
  • Pinch of ground cinnamon optional
  • Banana slices or mint sprig for garnish, optional

Instructions

  • Slice the banana into thin, even rounds.
  • Heat the skillet over medium heat and melt the butter.
  • Add banana slices, sprinkle with brown sugar, and cook for 2–3 minutes, flipping as needed, until golden and soft.
  • Sprinkle cinnamon, if using, and stir gently.
  • Remove the caramelized banana pieces and let them cool slightly.
  • In a cocktail shaker, add cooled banana, vanilla, pineapple juice, lemon juice, and three ice cubes. Shake well for 20–30 seconds.
  • Strain into a glass (or pour in all if not fussed about pulp).
  • Top with sparkling water or club soda, and extra ice. Garnish as desired.

Notes

Let bananas cool before shaking. Adjust sweetness with brown sugar or honey. Try coconut milk for creaminess or orange juice if out of pineapple. Add sparkling water last for max fizz. Great for a crowd—just prep ahead and add soda at the end.
