In a cocktail shaker, add ¾ cup blueberries and mint leaves. Muddle until berries release their juice.
Pour in vodka, lemon juice, and simple syrup. Add ice and shake for 15-20 seconds.
Double strain into the prepared Collins glass filled with ice.
Top with club soda and stir gently.
Garnish with remaining fresh blueberries and a mint sprig.
Notes
The drink tastes best with fresh blueberries, but frozen ones work in a pinch. Just thaw them first.Store simple syrup in the fridge for up to 2 weeks. For a mocktail version, replace vodka with white grape juice and add an extra splash of club soda.Double straining removes small berry pieces and ensures a smooth texture.
