Equipment

  • Cocktail shaker
  • Fine-mesh strainer
  • Jigger
  • Small saucepan
  • Bar spoon
  • Grater or microplane
  • Chilled coupe or rocks glass

Ingredients

  • 2 oz bourbon whiskey choose a bourbon with caramel or oak notes
  • 0.5 oz vanilla simple syrup sugar, water, and a split vanilla bean
  • 1 whole egg fresh and at room temp
  • few drops vanilla extract optional, for extra vanilla
  • freshly grated nutmeg for garnish
  • ice cubes for shaking

Instructions

  • Pour bourbon, vanilla simple syrup, and the egg into your cocktail shaker.
  • Seal and give a dry shake (no ice) for about 15 seconds to blend the egg well.
  • Add a handful of ice, then shake again until the shaker feels cold and frosty.
  • Strain through a fine mesh into a chilled glass.
  • Grate a little fresh nutmeg over the top and serve immediately.

Notes

Make vanilla simple syrup by simmering equal parts sugar and water with half a vanilla bean for 5–10 minutes. For more richness, use a higher-proof bourbon or add a splash of cream. Fresh nutmeg and egg make the texture and aroma truly special. Serve right away for best foam.
