Add peach slices and simple syrup (or sugar cube) to a mixing glass or short cocktail glass. Muddle until the peach is juicy.
Add Angostura bitters and bourbon; stir gently to combine.
Add ice (large cubes preferred) and stir for about 20 seconds until well chilled.
Optional: fine-strain into a fresh glass over new ice for a smoother sip.
