  • Ice cube tray

Ingredients

  • 1 cup fresh mixed berries blueberries, blackberries, strawberries, raspberries
  • 1/2 cup fresh blueberries
  • 1/4 cup fresh blackberries
  • 1/2 cup club soda or sparkling water
  • 1 tablespoon honey or simple syrup adjust to taste
  • Juice of 1 lime
  • A handful of fresh mint leaves
  • 1 –2 sprigs of fresh rosemary optional
  • 1/2 cup ice cubes
  • Extra berries and mint (for garnish

Instructions

  • Add mixed berries, blueberries, blackberries, lime juice, honey (or syrup), and half the ice to a blender.
  • Toss in mint leaves and rosemary (if using), and blend until smooth.
  • Taste and adjust sweetness or tartness as needed.
  • Strain through a fine mesh strainer if you prefer a smoother texture.
  • Pour club soda or sparkling water into tall glasses, filling each halfway.
  • Slowly pour the berry blend over the soda for a layered look.
  • Add extra ice cubes and garnish with whole berries and mint sprigs.
  • Gently stir and serve immediately.
