Ingredients

For one cocktail:

  • 1/4 cup fresh blueberries
  • 1 oz 30 ml simple syrup
  • 1/2 oz 15 ml fresh lemon juice
  • 4 oz 120 ml chilled sparkling wine
  • Blueberries and lemon twist for garnish

Use ripe, sweet blueberries for the best flavor. You can make simple syrup by mixing equal parts sugar and water until dissolved.

Instructions

  • Put blueberries and simple syrup in the shaker. Muddle until berries are crushed.
  • Add lemon juice and ice. Shake for 10-15 seconds.
  • Strain into a chilled champagne flute.
  • Top slowly with sparkling wine. Stir gently.
  • Garnish with a few blueberries and a lemon twist.
  • Serve right away while the drink is cold and bubbly.
