  • Mixing pitcher: I use this to combine everything.
  • Spoon or whisk: I use one to stir the mixture well.
  • Tall glasses: These show off the drink and hold plenty of ice.
  • Ice cube tray: I freeze ice ahead of time.
  • Citrus juicer (optional): This makes getting fresh lemon juice easier.

Ingredients

  • 1 cup fresh blueberries washed; frozen blueberries work in a pinch
  • 1 1/2 cups pineapple juice 100% juice, not from concentrate if possible
  • 1 tablespoon honey or agave syrup for sweetness
  • 1/2 lemon juiced (about 1 tablespoon)
  • 1 cup cold sparkling water for fizz; plain or lemon-flavored
  • Ice cubes about 1 cup, or as needed
  • Mint leaves extra blueberries, and pineapple slices (optional, for garnish)

Instructions

  • Add the blueberries and pineapple juice to the blender.
  • Blend until the mixture is fully smooth (about 30 seconds).
  • Strain through a fine mesh strainer to remove pulp and seeds.
  • Pour the juice into a large pitcher.
  • Mix in honey or agave syrup and fresh lemon juice. Stir until dissolved.
  • Add ice cubes to the glasses.
  • Pour the blueberry pineapple juice over the ice, filling each glass about halfway.
  • Top off with cold sparkling water. Stir gently to mix.
  • Garnish with mint leaves, pineapple slices, or extra blueberries. Serve right away.

Notes

If I want a sweeter drink, I add more honey or agave.
If the drink is too thick, I splash in a bit more sparkling water.
I like serving this mocktail with a straw so the layers mix slowly.
For a festive touch, sometimes I freeze blueberries inside ice cubes. It looks fun, honestly.
I always make sure the pineapple juice is well-chilled before blending.
This helps the mocktail stay cold longer without needing a lot of ice.
I avoid over-blending the fruit, since it can make the mocktail foamy.
If I’m not in the mood for fizz, I use regular water instead of sparkling.
