1 1/2cupspineapple juice100% juice, not from concentrate if possible
1tablespoonhoney or agave syrupfor sweetness
1/2lemonjuiced (about 1 tablespoon)
1cupcold sparkling waterfor fizz; plain or lemon-flavored
Ice cubesabout 1 cup, or as needed
Mint leavesextra blueberries, and pineapple slices (optional, for garnish)
Instructions
Add the blueberries and pineapple juice to the blender.
Blend until the mixture is fully smooth (about 30 seconds).
Strain through a fine mesh strainer to remove pulp and seeds.
Pour the juice into a large pitcher.
Mix in honey or agave syrup and fresh lemon juice. Stir until dissolved.
Add ice cubes to the glasses.
Pour the blueberry pineapple juice over the ice, filling each glass about halfway.
Top off with cold sparkling water. Stir gently to mix.
Garnish with mint leaves, pineapple slices, or extra blueberries. Serve right away.
