Ingredients

For 2 servings:

  • 1 cup fresh blueberries plus extra for garnish
  • 4 oz white rum
  • 2 oz lime juice
  • 2 tbsp sugar
  • 8-10 fresh mint leaves
  • 1/2 cup vanilla yogurt
  • 1/4 cup heavy cream
  • Club soda
  • Ice cubes

Fresh blueberries give the best flavor, but frozen work too. Pick a good quality white rum. Fresh lime juice tastes better than bottled. Any brand of vanilla yogurt is fine. The heavy cream adds richness to the parfait layer.

Instructions

  • Blend 1 cup blueberries until smooth. Set aside.
  • In a shaker, muddle mint leaves with sugar and lime juice.
  • Add rum and ice. Shake well.
  • Strain into glasses filled with ice.
  • Top with a splash of club soda.
  • Mix yogurt and cream in a bowl.
  • Layer drinks: mojito mix, yogurt cream, blueberry puree.
  • Repeat layers until glasses are full.
  • Garnish with mint and blueberries.

Chill glasses before making the drink for an extra cool treat. Make sure to layer carefully for a pretty look. Serve right away so the layers don't mix too much.

    Notes

    This recipe is easy to adjust. For a non-alcoholic version, skip the rum and use more club soda. You can swap blueberries for other berries like raspberries or strawberries. If you like it sweeter, add more sugar to taste. For a lighter option, use Greek yogurt instead of the cream mixture. Freeze some blueberries to use as ice cubes - they look nice and won't water down the drink.
