Ingredients

  • 2 cups fresh blueberries plus extra for garnish
  • 1 cup freshly squeezed lemon juice about 6-8 lemons
  • ¾ cup granulated sugar or honey
  • ½ cup fresh mint leaves plus extra sprigs for garnish
  • 6 cups cold water
  • 1 lemon thinly sliced for garnish
  • Ice cubes

Optional add-ins:

  • Splash of sparkling water for fizz
  • 1 tablespoon culinary lavender
  • ¼ teaspoon vanilla extract
  • Frozen blueberries to use as ice cubes

For a sweeter drink, add more sugar. For a more tart flavor, reduce the sugar amount. Fresh blueberries work best, but frozen blueberries can be substituted in a pinch.

Instructions

  • Prepare the blueberry syrup: Add blueberries, sugar, and ½ cup water to a small saucepan. Bring to a simmer over medium heat, stirring occasionally. Cook for 5-7 minutes until blueberries burst and sugar dissolves.
  • Cool and blend: Remove from heat and let cool for 10 minutes. Transfer to a blender and puree until smooth, then strain through a fine mesh strainer into a pitcher.
  • Add mint and lemon: In the pitcher with the blueberry syrup, add mint leaves and muddle gently to release the oils. Then, add lemon juice and stir to combine.
  • Complete the mocktail: Add the remaining water and stir well. Refrigerate for at least 1 hour to allow flavors to blend.
  • Serve: Fill glasses with ice, pour in the blueberry mint lemonade, and garnish with lemon slices, fresh blueberries, and mint sprigs.

For a fancy presentation, rim glasses with sugar or serve with colorful paper straws.

    Notes

    This recipe makes about 8 servings and keeps well in the refrigerator for up to 3 days. The flavor actually improves after a few hours as the mint and blueberry notes blend together.
    For a party version, freeze blueberries inside ice cubes for a pretty effect. The mocktail can be prepared ahead of time, but add fresh garnishes just before serving.
    Children especially enjoy this beverage on hot summer days. For an adult version, add 1.5 oz of vodka or white rum per serving.
    The recipe can be easily doubled for larger gatherings. Try making blueberry mint lemonade popsicles by pouring the mixture into popsicle molds and freezing for 4-6 hours.
