1cupfresh blueberries
1cupgranulated sugar
1cupwater
1/2cupfresh lime juiceabout 4 limes
2cupscold water
Ice cubes
Extra blueberries and lime slices for garnish
Fresh mint leavesoptional
Instructions
Add blueberries, sugar, and 1 cup water to a saucepan.
Bring to a simmer over medium heat, stirring until the sugar dissolves and the berries burst.
Remove from heat and let cool for 10-15 minutes.
Strain the blueberry syrup into a pitcher, pressing the solids to get as much juice as possible.
Stir in the fresh lime juice and 2 cups cold water.
Refrigerate until cold.
To serve, fill glasses with ice.
Pour the blueberry limeade over ice and garnish with extra blueberries, lime slices, or mint if you like.
Notes
This recipe makes about four servings. For a stronger berry flavor, I sometimes toss in extra blueberries while simmering.The syrup can be made ahead and kept in the fridge for up to three days.To make it fizzy, I swap cold water for sparkling water right before serving.
