Ingredients

  • 1/4 cup fresh blueberries plus extra for garnish
  • 1 oz 2 tablespoons blueberry syrup
  • 1 oz 2 tablespoons fresh lime juice
  • 1/2 oz 1 tablespoon simple syrup
  • 4-6 oz club soda or sparkling water
  • Ice cubes
  • Lime wheels for garnish
  • Fresh mint leaves optional

For homemade blueberry syrup:

  • 1 cup fresh or frozen blueberries
  • 1/2 cup sugar
  • 1/2 cup water

Quality ingredients make a difference in this recipe. Use fresh blueberries when in season for the best flavor. The homemade blueberry syrup adds depth but store-bought works too.

Instructions

  • Make blueberry syrup (if using homemade): Combine blueberries, sugar, and water in a small saucepan. Bring to a simmer over medium heat. Cook for 10 minutes, stirring occasionally. Remove from heat, strain, and let cool completely.
  • Prepare the glass: Fill a highball glass with ice cubes.
  • Muddle the berries: Place fresh blueberries in a cocktail shaker and muddle gently to release juices without completely crushing them.
  • Mix the drink: Add blueberry syrup, lime juice, and simple syrup to the shaker. Add ice and shake vigorously for about 15 seconds.
  • Strain and serve: Strain the mixture into the prepared glass. Top with club soda or sparkling water.
  • Garnish: Add a lime wheel, a few fresh blueberries, and optional mint leaves.

The drink should have a beautiful purple-blue color with a refreshing fizz when served immediately.

    Notes

    This mocktail can be prepared in advance (except for adding the sparkling water) and stored in the refrigerator for up to 24 hours. Add the club soda just before serving to maintain the fizz.
    For a frozen version, blend all ingredients except the club soda with ice until smooth. Pour into glasses and top with club soda.
    Try variations by adding other berries like raspberries or blackberries to the mix. For a sweeter drink, increase the simple syrup to 3/4 oz.
    The blueberry syrup can be stored in an airtight container in the refrigerator for up to two weeks and used in other drinks or desserts.
