Ingredients

  • 1 cup frozen blueberries
  • 1/2 cup fresh blueberries for garnish and texture
  • 3/4 cup fresh lemon juice from 3-4 lemons
  • 1/2 cup simple syrup or agave nectar
  • 1 cup ice cubes
  • 1 cup sparkling water, seltzer, or club soda
  • mint leaves for garnish
  • 1 tablespoon granulated sugar optional, for rim or more sweetness

Instructions

  • Combine frozen blueberries, ice cubes, lemon juice, and simple syrup in blender.
  • Blend until slushy. Taste and add more sugar or syrup if needed.
  • Strain through a fine mesh strainer for a smoother texture, if desired.
  • Pour slush halfway up each glass.
  • Top with sparkling water, seltzer, or club soda. Stir gently.
  • Add fresh blueberries and mint for garnish. Serve immediately.

Notes

Use ripe lemons and juicy blueberries for best results. Adjust syrup to taste for sweetness. Serve right away for the best icy texture. Agave can be used in place of simple syrup. Chilling glasses before serving helps slush stay cold longer.
