Ingredients

  • 2 cups fresh blueberries
  • 1/2 cup fresh lemon juice about 4 lemons
  • 1/4 cup honey or maple syrup
  • 4 cups sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish
  • Extra blueberries and lemon slices for garnish

Instructions

  • Wash the blueberries and add them to the pitcher.
  • Muddle the blueberries until they release their juices.
  • Pour in the fresh lemon juice and honey. Stir until the honey dissolves.
  • Strain the mixture through a fine mesh strainer into a clean pitcher.
  • Add the sparkling water and stir gently.
  • Fill tall glasses with ice cubes.
  • Pour the blueberry lemon mixture into the glasses.
  • Garnish with fresh mint leaves, extra blueberries, and lemon slices.

Notes

Store any leftover blueberry-lemon base in the fridge for up to 3 days. Add the sparkling water just before serving.
Make blueberry ice cubes by freezing whole berries in water for an extra pretty touch.
Replace honey with maple syrup or simple syrup if needed.
The recipe serves 4-6 people and can be doubled for larger groups.
