Ingredients

  • 2 cups fresh blueberries
  • 1/4 cup fresh ginger peeled and sliced
  • 1/3 cup honey or agave nectar
  • 1/2 cup fresh lemon juice
  • 4 cups sparkling water
  • Fresh mint leaves for garnish
  • Ice cubes
  • Extra blueberries for garnish

Instructions

  • Muddle blueberries in the pitcher until they release their juices.
  • Add sliced ginger and honey to the pitcher. Mix well until honey dissolves.
  • Pour in lemon juice and stir to combine.
  • Strain the mixture through a fine mesh strainer to remove pulp and ginger pieces.
  • Fill glasses with ice cubes.
  • Pour 1/4 cup of the blueberry-ginger mixture into each glass.
  • Top with sparkling water and stir gently.
  • Garnish with fresh mint leaves and extra blueberries.

Notes

This recipe makes 6 servings. Store extra blueberry-ginger mixture in the fridge for up to 3 days.
The drink can be made sweeter by adding more honey or agave nectar.
For a stronger ginger taste, let the ginger steep in the mixture for 30 minutes before straining.
Replace sparkling water with ginger ale for extra sweetness and fizz.
