Add sliced ginger and honey to the pitcher. Mix well until honey dissolves.
Pour in lemon juice and stir to combine.
Strain the mixture through a fine mesh strainer to remove pulp and ginger pieces.
Fill glasses with ice cubes.
Pour 1/4 cup of the blueberry-ginger mixture into each glass.
Top with sparkling water and stir gently.
Garnish with fresh mint leaves and extra blueberries.
