This drink brings together sweet blueberries and creamy coconut. It comes together quickly and there's zero alcohol involved, so anyone can enjoy it.

Equipment

  • Cocktail shaker or a mason jar with a lid
  • Muddler (or just use the back of a spoon—no need to get fancy)
  • Measuring spoons and cups
  • Fine-mesh strainer
  • Tall glass (12–16 oz works well)
  • Small bowl for smashing blueberries
  • Stirring spoon
  • Ice cube tray
  • Citrus juicer (optional, but nice to have)

Ingredients

  • ½ cup fresh blueberries
  • ½ cup unsweetened coconut milk from a can or carton—whatever you have
  • 1 tablespoon fresh lime juice
  • 2 –3 teaspoons honey or simple syrup taste and see what you like
  • ½ cup club soda
  • Ice cubes
  • Extra blueberries lime slices, and mint sprigs for garnish

Instructions

  • Toss the blueberries and honey into a small bowl.
  • Muddle them until they’re juicy and kind of messy.
  • Add coconut milk and lime juice to the blueberry mix.
  • Pour it all into a cocktail shaker or jar, throw in some ice, and shake it up well.
  • Strain the mixture into a tall glass packed with more ice.
  • Slowly top with club soda and give it a gentle stir.
  • Finish with extra blueberries, a lime slice, and a sprig of mint if you’re feeling fancy.

Notes

Adjust the honey to your liking—some days I want it sweeter, some days not. If you’d rather have a lighter texture, swap coconut milk for coconut water and see what you think.
Making a batch for a crowd? Just multiply the ingredients and mix in a pitcher. Don’t add the club soda until the very end though, or you’ll lose the fizz.
Sometimes I muddle in a few mint leaves with the blueberries for extra flavor. If you want to prep ahead, that’s fine, but I always wait to add the ice and club soda until right before serving so it stays fresh and fizzy.
