Ingredients

  • 2 oz white rum
  • 1 oz blue curacao or blue curacao liqueur
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 6-8 fresh mint leaves
  • 2-3 wedges lime
  • club soda, sparkling water, Sprite, or 7Up to top
  • ice cubes crushed or cubed
  • triple sec optional, for extra citrus flavor

Instructions

  • Place mint leaves and lime wedges in the bottom of a highball glass.
  • Use a cocktail muddler to gently press the mint and lime until the oils and juice release.
  • Add white rum, blue curacao, lime juice, and simple syrup to a cocktail shaker with ice.
  • Shake lightly to mix the liquids.
  • Fill the glass with ice cubes, then strain the mixture into the glass.
  • Top with club soda, sparkling water, Sprite, or 7Up.
  • Stir gently with a bar spoon.
  • Garnish with a lime wedge and a sprig of mint. Serve immediately.

Notes

For best results, use fresh mint and lime. Muddle gently to avoid bitterness. Use Sprite or 7Up for a sweeter version, club soda for lighter. Serve immediately for peak freshness and color. Works well as a mocktail by omitting the rum!
