Add blackberries to the shaker and muddle until crushed.
Pour in lemon juice, simple syrup, gin, and Aperol.
Add ice and shake for 10–15 seconds.
Strain into a wine glass filled with ice.
Top with prosecco and then club soda or sparkling water.
Stir gently with a bar spoon.

Notes
Fresh lemon juice is best. Frozen blackberries (thawed) can be used if fresh are unavailable. Skip gin for a lighter version, or swap mint for basil. Serve immediately for the best bubbles.
