Equipment

  • Wine glass
  • Cocktail spoon
  • Small saucepan
  • Fine-mesh strainer
  • Measuring jigger
  • Muddler
  • Ice scoop
  • Small bowl

Ingredients

  • 3 oz prosecco chilled
  • 2 oz Aperol
  • 1 oz blackberry syrup store-bought or homemade
  • 1 oz club soda chilled
  • Ice cubes
  • Fresh blackberries for garnish
  • Orange slice optional, for garnish
  • Simple syrup optional, for sweetness

Instructions

  • Fill a large wine glass about halfway with ice cubes.
  • Pour in the Aperol and blackberry syrup.
  • Slowly add prosecco—don’t rush, you want to keep those bubbles.
  • Top off with club soda.
  • Stir gently with a cocktail spoon, just enough to mix.
  • Add a few fresh blackberries and an optional orange slice.
  • Serve immediately while cold and fizzy.

Notes

Use chilled prosecco and club soda to slow ice melt. Add simple syrup for extra sweetness if desired. For homemade blackberry syrup, simmer blackberries with sugar and water, then strain. For a lighter version, reduce Aperol to 1.5 oz and increase club soda.
