  • Fine-mesh strainer
  • Wooden spoon or muddler
  • Ice cube tray
  • Tall glasses for serving

Ingredients

  • 4 cups brewed hibiscus tea cooled
  • 2 cups mixed fresh berries strawberries, raspberries, blackberries
  • 1/4 cup fresh lime juice
  • 3 tablespoons honey or agave nectar
  • 4 cups sparkling water
  • Fresh mint leaves
  • Ice cubes
  • Extra berries for garnish

Instructions

  • Brew the hibiscus tea using 4 tea bags in 4 cups of hot water. Let steep for 5 minutes, then cool completely.
  • Place berries in the pitcher and muddle gently to release their juices.
  • Add the cooled hibiscus tea, lime juice, and honey to the pitcher. Stir until honey dissolves completely.
  • Just before serving, add sparkling water and stir gently to combine.
  • Fill tall glasses with ice cubes. Pour the spritzer mixture over ice.
  • Garnish each glass with fresh mint leaves and extra berries.

Notes

The base mixture can be made up to 24 hours ahead and stored in the refrigerator.
Add sparkling water right before serving to maintain the fizz.
For a sweeter drink, add more honey one teaspoon at a time.
Replace fresh berries with frozen when fresh aren't in season.
The recipe makes 8 servings and stays fresh in the refrigerator for 2-3 days without the sparkling water added.
