Bring water to a boil in a pot. Then, remove from heat and add hibiscus tea bags.
Let the tea steep for 5 minutes, then remove the tea bags and let it cool to room temperature.
Place berries in the pitcher and muddle gently to release their juices.
Add the cooled hibiscus tea, lime juice, and honey to the pitcher. Then, stir until the honey dissolves.
Refrigerate for at least 2 hours or until cold.
Just before serving, add sparkling water and stir gently.
Fill glasses with ice and pour the mixture over.
Garnish with fresh mint leaves and extra berries.
