Equipment

  • Large pitcher (64 oz capacity)
  • Tea strainer or fine mesh sieve
  • Measuring cups and spoons
  • Wooden spoon or muddler
  • Glass serving cups
  • Ice cube trays

Ingredients

  • 4 cups water
  • 4 hibiscus tea bags
  • 2 cups fresh mixed berries strawberries, raspberries, blackberries
  • 1/2 cup fresh lime juice
  • 1/3 cup honey or agave nectar
  • 2 cups sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish
  • Extra berries for garnish

Instructions

  • Bring water to a boil in a pot. Then, remove from heat and add hibiscus tea bags.
  • Let the tea steep for 5 minutes, then remove the tea bags and let it cool to room temperature.
  • Place berries in the pitcher and muddle gently to release their juices.
  • Add the cooled hibiscus tea, lime juice, and honey to the pitcher. Then, stir until the honey dissolves.
  • Refrigerate for at least 2 hours or until cold.
  • Just before serving, add sparkling water and stir gently.
  • Fill glasses with ice and pour the mixture over.
  • Garnish with fresh mint leaves and extra berries.

Notes

Store the base mixture without sparkling water in the fridge for up to 3 days. Add the sparkling water only when ready to serve.
For a sweeter drink, add more honey or agave nectar to taste.
To make ahead, prepare the base mixture and keep it separate from the sparkling water. Add the sparkling water right before serving to maintain carbonation.
Frozen berries can replace fresh ones when out of season.
