Ingredients

  • 2 cups mixed berries strawberries, blueberries, raspberries
  • 1 orange thinly sliced
  • 1 lime thinly sliced
  • 1 lemon thinly sliced
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 1/3 cup simple syrup or honey
  • 1 can 13.5 oz coconut milk
  • 3 cups sparkling water
  • 1 cup white grape juice
  • Ice cubes
  • Fresh mint leaves for garnish
  • Coconut flakes for garnish optional

For a sweeter version, add more simple syrup. For a lighter version, use light coconut milk instead of full-fat.

Instructions

  • Prepare the fruit: Wash all berries and fruit thoroughly. Slice strawberries in half, leave smaller berries whole. Cut citrus fruits into thin rounds.
  • Make the base: In the pitcher, combine berries and citrus slices. Gently muddle with a wooden spoon to release some juices without completely crushing the fruit.
  • Add liquids: Pour in the lime juice, lemon juice, and simple syrup or honey. Stir well.
  • Mix in coconut: Add the coconut milk and white grape juice. Stir gently until well combined.
  • Chill: Refrigerate for at least 2 hours or overnight to allow flavors to blend together.
  • Serve: Just before serving, add sparkling water and stir gently. Pour over ice in glasses and garnish with mint leaves and coconut flakes.

This mocktail tastes best when made a day ahead and allowed to chill overnight.

    Notes

    The recipe serves 6-8 people and can be doubled for larger gatherings. Store leftovers in the refrigerator for up to 2 days, though the sparkling water will lose its fizz.
    For a frozen version, blend the base mixture with ice to create a slushie texture. Add the sparkling water last and stir gently.
    To make this drink kid-friendly, reduce the lime juice to 2 tablespoons. For a more adult version, add a splash of coconut extract for deeper flavor.
    The berries can be adjusted based on what's in season. Frozen berries work well too, but thaw and drain them first to avoid excess water.
