Ingredients

For one Bellini Blush cocktail, you'll need:

  • 2 ounces fresh peach puree
  • 4 ounces chilled champagne or prosecco
  • 1/4 ounce raspberry liqueur
  • Fresh peach slice for garnish

Use ripe peaches for the best flavor. If peaches aren't in season, good quality frozen peaches work too. Pick a dry champagne or prosecco to balance the sweetness of the fruit.

Instructions

Make the peach puree:

  • Peel and pit 2-3 ripe peaches
  • Blend until smooth
  • Strain to remove any chunks
  • Add 2 ounces of peach puree to a champagne flute
  • Pour in 1/4 ounce of raspberry liqueur
  • Slowly add 4 ounces of cold champagne or prosecco
  • Stir gently with a spoon to mix
  • Garnish with a fresh peach slice

Serve right away while the drink is cold and bubbly.
