Equipment

  • Cocktail shaker
  • Jigger or measuring cup
  • Muddler
  • Cocktail strainer
  • Tall glasses
  • Ice bucket

Ingredients

Here's what you'll need to make 4 servings:

  • 8 oz white rum
  • 4 oz apricot brandy
  • 4 oz fresh lime juice
  • 4 oz pineapple juice
  • 2 oz simple syrup
  • 4-6 fresh apricots pitted and sliced
  • Mint sprigs and lime wedges for garnish
  • Ice

You can adjust the amounts to make more or less. Fresh juices taste best, but bottled work too. Pick ripe, fragrant apricots for the best flavor.

Instructions

Follow these steps to make the cocktail:

  • Add sliced apricots to a shaker and muddle gently.
  • Pour in rum, brandy, juices, and syrup.
  • Fill shaker with ice and shake for 10-15 seconds.
  • Strain into ice-filled glasses.
  • Garnish with mint sprigs and lime wedges.
  • Serve right away while cold.

You can blend all ingredients with ice for a frozen version. Adjust sweetness to taste by adding more or less syrup.

    Notes

This recipe is pretty flexible. Try these tips:
Use peach brandy instead of apricot for a twist.
Add a splash of grenadine for color and sweetness.
Swap white rum for dark rum or spiced rum.
Make a big batch in a pitcher for parties.
Freeze some of the fruit to use instead of ice.
The drink is strong, so sip slowly. You can make a mocktail version by leaving out the alcohol and using apricot nectar.
