A cozy, fall riff on the classic Dark & Stormy. Dark rum, crisp apple cider, real maple syrup, and spicy ginger beer come together for a lightly sweet, zippy highball that’s quick to make.
Add dark rum, apple cider, maple syrup, and grated ginger to a cocktail shaker with ice.
Shake briefly to chill, then strain into the prepared glass.
Slowly top with ginger beer (pour over the back of a spoon for layers), then stir lightly if you prefer it mixed.
Garnish with an apple slice or lime wedge and serve immediately.
Notes
Keep the ginger beer crisp by adding it last and avoiding vigorous stirring. For a lighter drink, reduce the rum and increase cider; for more spice, add a touch more fresh ginger or a splash of spiced rum.
