Ingredients

  • 2 oz dark rum
  • 3 oz apple cider fresh, not sparkling
  • 4 oz ginger beer spicy style preferred
  • 0.5 oz maple syrup
  • 0.25 tsp fresh ginger finely grated, optional
  • ice cubes for the glass
  • apple slice or lime wedge for garnish

Instructions

  • Fill a highball glass with ice.
  • Add dark rum, apple cider, maple syrup, and grated ginger to a cocktail shaker with ice.
  • Shake briefly to chill, then strain into the prepared glass.
  • Slowly top with ginger beer (pour over the back of a spoon for layers), then stir lightly if you prefer it mixed.
  • Garnish with an apple slice or lime wedge and serve immediately.

Notes

Keep the ginger beer crisp by adding it last and avoiding vigorous stirring. For a lighter drink, reduce the rum and increase cider; for more spice, add a touch more fresh ginger or a splash of spiced rum.
