Ingredients

  • 3 oz apple juice preferably fresh and unfiltered
  • 1 oz fresh lime juice about 1 medium lime
  • 4 oz ginger beer not ginger ale
  • 2-3 thin slices of fresh ginger
  • 1-2 thin apple slices for garnish
  • Fresh mint leaves for garnish
  • Ice cubes
  • Optional: 1/4 oz simple syrup if you prefer a sweeter drink
  • Optional: dash of cinnamon

Choose a quality ginger beer with a good spice level. The difference between ginger beer and ginger ale is important—ginger beer has a much stronger flavor that gives this mocktail its characteristic kick.

Instructions

  • Prepare your glass: Fill a collins glass or copper mug with ice cubes.
  • Muddle the ginger: Place fresh ginger slices in the bottom of a cocktail shaker and gently muddle to release the oils and flavor.
  • Combine liquids: Add apple juice and fresh lime juice to the shaker with the muddled ginger.
  • Shake: Add ice to the shaker, secure the lid, and shake vigorously for about 15 seconds until well-chilled.
  • Strain and pour: Strain the mixture into your prepared glass or mug.
  • Top with ginger beer: Slowly pour the ginger beer over the mixture. Stir gently to combine.
  • Garnish: Add apple slices and mint leaves as garnish. A light dusting of cinnamon can enhance the apple flavor.
  • Serve immediately: The carbonation from the ginger beer is best enjoyed fresh.

Notes

This recipe can be easily modified to suit different tastes. For a stronger ginger flavor, add more fresh ginger when muddling or choose a spicier ginger beer.
Make a big batch for parties by multiplying the ingredients and keeping the ginger beer separate until serving time. This prevents the drink from going flat.
