Ingredients

  • Club soda to top
  • Apple slices and mint sprigs for garnish
  • Ice cubes

  • 1 cup water
  • 1 cup sugar
  • 1/3 cup fresh ginger peeled and thinly sliced

Instructions

Prepare ginger syrup (can be made ahead):

  • Combine water and sugar in a small saucepan
  • Add sliced ginger and bring to a boil
  • Reduce heat and simmer for 15 minutes
  • Remove from heat, let cool, then strain
  • Store in refrigerator for up to 2 weeks

Mix the mocktail:

  • Place mint leaves and ginger slice in a shaker
  • Gently muddle to release flavors
  • Add apple juice, lemon juice, and ginger syrup
  • Fill the shaker with ice and shake vigorously for 15 seconds
  • Strain into an ice-filled highball glass
  • Top with club soda (about 2 oz)

    Notes
