Instructions
Add apple slices, fennel seeds, ginger, and mint leaves to the cocktail shaker. Gently muddle to release flavors.
Pour in apple juice, apple cider, lemon juice, and lime juice. Add cinnamon or cinnamon stick.
Fill the shaker with ice cubes. Shake well for about 15–20 seconds until chilled.
Strain mixture into tall glasses filled with fresh ice.
Top each glass with ginger ale or ginger beer.
Garnish with apple slices, mint sprigs, or fennel fronds as desired. Serve immediately.
