Ingredients

  • 1 green apple thinly sliced
  • 1 tsp fennel seeds
  • 4-5 fresh mint leaves
  • 0.5 fresh ginger about ½ inch piece, sliced
  • 1 cup apple juice unsweetened if possible
  • 0.5 cup apple cider
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh lime juice
  • 0.5 tsp ground cinnamon or 1 small cinnamon stick
  • Ginger ale or ginger beer to top
  • Ice cubes
  • Apple slices, mint sprigs, or extra fennel fronds for garnish, optional

Instructions

  • Add apple slices, fennel seeds, ginger, and mint leaves to the cocktail shaker. Gently muddle to release flavors.
  • Pour in apple juice, apple cider, lemon juice, and lime juice. Add cinnamon or cinnamon stick.
  • Fill the shaker with ice cubes. Shake well for about 15–20 seconds until chilled.
  • Strain mixture into tall glasses filled with fresh ice.
  • Top each glass with ginger ale or ginger beer.
  • Garnish with apple slices, mint sprigs, or fennel fronds as desired. Serve immediately.

Notes

Use sweetened apple juice if you want it sweeter, or swap apple cider for pear juice. Ginger beer for more spice, ginger ale for mild flavor. Serve fresh for best fizz. Add extra mint or fennel syrup for a stronger herbal vibe.
