Ingredients

  • 2 oz Aperol
  • 4 oz Tonic water chilled
  • 0.5 oz Rosemary simple syrup equal parts sugar and water, plus fresh rosemary
  • Ice cubes
  • 1 Fresh rosemary sprig garnish

Instructions

  • Fill a highball glass with ice cubes.
  • Pour in 2 oz Aperol.
  • Add 0.5 oz rosemary simple syrup.
  • Slowly pour in 4 oz chilled tonic water.
  • Stir gently with a bar spoon to mix without losing carbonation.
  • Garnish with a fresh rosemary sprig and serve immediately.

Notes

If you don’t have rosemary syrup, steep fresh rosemary in hot simple syrup for 10 minutes, strain, and cool. Adjust syrup amount for desired sweetness. For a lighter version, reduce Aperol to 1.5 oz and increase tonic water.
