A pineapple mojito is a refreshing twist on the classic mojito, combining sweet pineapple with fresh mint, lime juice, rum, and sparkling water.
This cocktail is easy to make at home with just a few basic ingredients and simple steps. I enjoy making this drink when I want something both fruity and light.
The bright pineapple flavor pairs well with the cool taste of mint, making this mojito a great choice for warm days or casual gatherings.
If you like tropical drinks with a bit of fizz, this recipe is worth trying.
Pineapple Mojito Cocktail Recipe
Equipment
- I use a sturdy glass or a cocktail shaker for mixing the ingredients.
- A muddler is helpful to press and mix the mint, pineapple, and lime together. If a muddler is not available, the back of a spoon also works.
- I measure the liquids with a jigger or small measuring cup.
- A long spoon makes it easy to stir everything well.
- For serving, I pick a tall glass to hold the ice and ingredients.
- A knife and cutting board are necessary for slicing the fruit.
- A strainer can help if I want a smooth drink without fruit bits.
- Ice is needed to chill the cocktail and keep it refreshing.
- I also keep paper towels nearby for spills.
Ingredients
I gather these fresh and simple items:
- 2 oz white rum
- 1/2 cup fresh pineapple chunks
- 8-10 fresh mint leaves
- 1 oz lime juice from 1 fresh lime
- 1 oz simple syrup 1:1 sugar and water mix
- Club soda
- Ice cubes
Instructions
- I start by putting the pineapple chunks, mint leaves, and lime juice in the bottom of a glass or shaker.
- Using my muddler, I press these together to release the juices and flavors. I am careful not to crush the mint too much.
- Next, I pour in the simple syrup and white rum.
- I add a large handful of ice. I stir or shake the mixture until it is well combined and cool.
- Then I strain (if desired) and pour the mixture into a tall glass filled with fresh ice.
- I top off the drink with club soda for some fizz and stir gently.
- For a nice touch, I add pineapple wedges, mint, or a lime wheel to the glass.

Tasting Notes
When I take a sip of a Pineapple Mojito, the first thing I notice is the balance of sweet and tart.
The pineapple flavor stands out, but the lime keeps the drink from tasting too sugary. The mint adds a clean, refreshing taste.
The drink has a light feel.
I taste natural fruit juice rather than anything artificial. The rum is present, but it does not overpower the other ingredients.
Texture:Â The Pineapple Mojito is smooth with a few bubbles from the soda.
The crushed ice makes it cold and slightly slushy.
I find this cocktail bright and easy to drink.
It feels light on my palate and does not leave a heavy aftertaste.
The aroma is fruity with hints of mint, which makes it pleasant as soon as I bring it to my mouth.
Substitute
Sometimes I run out of mint or pineapple, but I still want a refreshing drink.
Here are a few easy swaps that work well, at least in my kitchen.
Fruit Substitutes:
You can use other fruits instead of pineapple. Try:
- Mango
- Peach
- Watermelon
- Strawberries
These muddle up just as nicely as pineapple, honestly.
Mint Substitutes:
If I don’t have mint leaves, I use:
- Basil
- Cilantro
- Lemon balm
Each one brings a different twist, but all taste fresh in their own way.
Sugar Options:
White sugar can be swapped for:
- Honey
- Agave syrup
- Brown sugar
I usually just tweak the sweetness until it tastes right.
Soda Replacement:
If I don’t have club soda, I mix in:
- Sparkling water
- Lemon-lime soda (for a sweeter drink)
