If you sift the matcha first, you’ll dodge those dreaded clumps. Fresh lime juice just makes everything brighter—bottled stuff doesn’t even come close.
Ginger beer can be wildly different from brand to brand, so I’ll tweak the simple syrup depending on how sweet or spicy it is.
Want to skip the booze? Just leave out the vodka and splash in extra ginger beer. Easy.
I like using a copper mug mostly because it keeps things icy cold, but honestly, any glass will do in a pinch.
Sometimes I swap in honey syrup for the simple syrup—gives it a nice twist. And if you’re missing fancy bar tools, don’t sweat it; a jar with a tight lid totally works for shaking.

  • Matcha powder: I’ll grab green tea powder if matcha’s out of reach. The flavor’s a bit milder, but it does the trick.
  • Vodka: Gin, white rum, or even tequila can stand in. Each one gives the drink a new vibe.
  • Ginger beer: If I’m out of ginger beer, I’ll mix ginger ale with some fresh grated ginger or a splash of ginger syrup. Not exactly the same, but honestly, it’s still tasty.
  • Lime juice: Lemon juice works in a pinch for that tartness if I’ve run out of limes (which happens more than I’d like to admit).

  • Copper mug: No copper mug? I just use a regular glass. It’s fine.
  • Cocktail shaker: Sometimes I shake things up in a mason jar with a lid. Or, I’ll just stir it fast in a glass if I’m feeling lazy.
