When I’m craving a summer drink, I usually want something light, a bit sweet, and honestly, not a hassle to throw together for friends. This Honeyed Gin Sangria Cocktail checks all those boxes—smooth gin meets gentle honey, plus fresh fruit for a little pop.
It’s the kind of recipe that feels a little special, but you don’t need to be a mixologist or buy anything fancy. I really like that it comes together quickly and you can even make it ahead if you’re having people over.
With just a handful of ingredients, this sangria brings out those bright, crisp flavors that just work—whether it’s a casual hangout or you’re just chilling solo.
Honeyed Gin Sangria Cocktail Recipe
This cocktail is honestly one of my favorites. The honey brings a mellow sweetness, the fruit is classic sangria, and the gin adds a nice herbal kick.
It’s simple to make at home, and you don’t need any weird tools or ingredients. Just a few steps and you’re good.
Equipment
- Large pitcher (at least 1.5 liters)
- Long spoon or muddler
- Small saucepan (for honey syrup)
- Measuring cups and spoons
- Sharp knife
- Cutting board
- Citrus juicer (optional)
- Fine mesh strainer (if you don’t want pulp)
- Cocktail glasses or tumblers
- Ice cube tray
I go for a big pitcher so everything fits and chills nicely. The spoon or muddler is handy for mixing the fruit and syrup into the gin and juice.
A sharp knife and a cutting board are pretty much essential for slicing up the fruit. If pulp isn’t your thing, strain the juices.
Ingredients
- 1/2 cup honey
- 1/2 cup hot water
- 1 (750 ml) bottle dry white wine (like Sauvignon Blanc)
- 1/2 cup gin
- 1/2 cup orange juice (fresh is best)
- 1/4 cup lemon juice
- 1 orange, sliced into thin rounds
- 1 lemon, sliced
- 1 cup strawberries, hulled and sliced
- 1 cup green grapes, halved
- 1 peach, pitted and sliced (optional)
- 1-2 tablespoons fresh mint leaves
- 2 cups club soda (chilled)
- Ice cubes
Fresh, ripe fruit makes all the difference here. The honey syrup melts right in and gives that mellow sweetness.
Sometimes I’ll toss in a peach or swap in whatever berries are hanging around in my fridge.
Instructions
- Combine honey and hot water in a small saucepan. Stir until the honey dissolves, then let it cool.
- Add the cooled honey syrup, white wine, gin, orange juice, and lemon juice to a large pitcher.
- Stir well to combine.
- Add orange slices, lemon slices, strawberries, grapes, peach slices, and mint leaves to the pitcher.
- Gently stir again to mix the fruit throughout the liquid.
- Cover the pitcher and refrigerate for at least 2 hours (or up to overnight) to let the flavors blend.
- When you’re ready to serve, fill glasses with ice cubes.
- Pour sangria over the ice, add some fruit to each glass, and top with a splash of chilled club soda.
- Garnish with extra mint or a slice of citrus if you’re feeling fancy.
I always make the honey syrup first so it has time to cool while I slice the fruit. Chilling the sangria is key—the flavors just come together and taste so much better after a few hours.

Notes
Notes
Sometimes I’ll swap the white wine for rosé if I want a pink version. If I’m in the mood for something less sweet, I just cut back on the honey or orange juice.
For a non-alcoholic take, skip the gin and use sparkling water instead of wine. To make this ahead, I mix everything except the club soda and ice, then stash it in the fridge for up to a day.
I add the club soda and ice right before serving so it stays fizzy and cold. The mint can be strong, so if you’re not a huge fan, just use a little less.

Tasting Notes
When I take my first sip, the drink feels light and smooth on my tongue. There’s a gentle sweetness from the honey, balanced by the crisp taste of gin.
The honey brings this soft, golden flavor that kind of wraps around the tart fruits. I get a mix of orange, lime, and berries—each one adding its own bit of brightness.
The gin gives a subtle herbal edge, but it doesn’t take over. That keeps the drink interesting but never too heavy.
Sometimes, as the fresh fruit slices sit, they release even more juice. The sangria gets a little sweeter and fuller as time goes on.
On warmer days, honestly, there’s nothing quite like how cold and refreshing this cocktail is. The mix of fruit, honey, and gin just stays lively right to the last sip.
